Some of the following questions may not apply to your particular situation

What is the estimated duration of the event you are organizing? (a few days, one day, half a day, several hours...)

How many hours per day do you require the interpreters to be available for work?

Which languages do you want to cover? In other words, which languages do you want the participants to be allowed to speak and which ones do you want them to be able to listen through the interpreters? (these two do not necessarily coincide: there are speakers, for example, who understand English but are not fluent enough to speak it, so they need interpretation into their mother tongue)

What kind of interpretation do you need? (simultaneous, consecutive, whispering)

If some of the interpreters need to travel from abroad of from another city will it be possible for you to cover their travel expenses, provide accommodation or meals for them?

If some of the interpreters need to travel from abroad or from another city are they expected to arrive the day before or leave the day after the event?

Do you intend to record the interpretation for later commercial use?
